Aunt Betty’s Recipe – Squash Casserole

Squash Casserole

6 med. size yellow squash, slided, boiled and drained
1 med. onion, finelly chopped
2 carrots grated
1 can water chestnuts, chopped
1 8 oz container sour cream

1 can of undiluted cream of chicken soup
1 stick of margarine melted
1/2 cup grated cheddar cheese
Salt and pepper to taste
2 cups (1 package) Pepperidge Farm cornbread stuffing mix
without the seasonings

Preheat the oven to 350 degrees. Mix all ingrediets except the stuffing.
Butter a 2 quart casserole dish. Sprinkle 1 cup of stuffing over the bottom
of dish. Spread the squash mixture evenly over stuffing mix. Sprinkle
1 cup of stuffing mix on top of squash mixture. Bake at 30 min.
